  • g sunflower mince

  • tbsp tomato paste

  • garlic clove

  • red onion

  • tbsp olive oil

  • tsp oregano

  • chili flakes (as desired)

  • g kidney beans from a jar

  • medium-sized sweet potatoes

  • pickled or fresh jalapeños

  • g cherry tomatoes

  • bunch of fresh coriander

  • limes

  • ripe avocado

  • tbsp yeast flakes

  • tbsp pumpkin seeds

  • tsp salt

  • tsp pepper

preparation

  1. Preheat oven to 180 degrees Celsius.

  2. Peel the onion and garlic clove and chop finely.

  3. Sauté both in a pan with olive oil until translucent. Add tomato paste and sunflower mince. Season to taste with salt, pepper and a little chili and oregano. Roast for approx. 4-5 minutes and then remove from the hob.

  4. Wash the kidney beans thoroughly and mix them into the minced meat in the pan.

  5. Peel the sweet potatoes and cut them into thin slices.

  6. Place sweet potato slices on a baking tray (or oven dish) lined with baking paper. Arrange cherry tomatoes on top and spread the minced meat mixture on top.

  7. Distribute jalapeño slices as desired and garnish with nutritional yeast, salt and a little olive oil.

  8. Place in the preheated oven and bake for approx. 25-30 minutes.

  9. Wash the limes thoroughly and cut into quarters. Halve the avocado, remove the pit and cut into slices. Wash the herbs thoroughly and chop them up with your hands. Spread over the baked sweet potato nachos with a little more yeast flakes and serve.
